The dough is made the traditional griddle-baked way rather than the deep-fried style most scallion pancakes use today, giving it a chewy, springy bite with a strong pepper aroma, and it doesn't lose flavor even once it's gone cold. One Google reviewer wrote, "This probably shouldn't be called a scallion pancake... growing up I always thought of it as a griddle-baked flatbread — the scallion is just seasoning. But I have to say this is the purest version of the flavor. The dough is chewy with real bite, and it's just as good cold."
