源芳刈包, in Taipei's Wanhua District, has “Taiwanese hamburger” right on its sign; it was selected for 500 Bowls twice, in 2023 and 2026, plus a Michelin Bib Gourmand nod in 2025.

The signature gua-bao is NT$70, its braised pork springy and even the lean cuts juicy, with generous pickled greens; si-shen soup NT$65, mixed soup NT$75, pork-stomach soup NT$75, and pork-bladder and pork-sausage soups NT$65 each. Regulars praise the steady quality (“delicious every time”), though some note it isn't cheap, and you can no longer add extra cilantro.

Closed Mondays; otherwise open 11:30am to 8pm.
