惠中蔬食滴水坊

惠中蔬食滴水坊 is the vegetarian restaurant attached to Fo Guang Shan's Huizhong Temple, on Fuyuan Street in Taichung's Xitun District. The fully vegetarian cooking is refined — the signature stir-fried ban-tiao (flat rice noodles) is full of wok-fire and soaks up the savory sauce, while the hot-and-sour soup is thickened with wood ear, bamboo-shoot shreds, and tofu for an appetizing tang. You'll also often see seasonal stir-fried vegetables, sweet-and-sour nut dishes, and freshly made sesame layered-pastry bites, with a bowl of mango-pomelo sago or snow-fungus-and-lotus-seed soup to finish. Clean ingredients and careful plating make it vegetarian even meat-eaters can enjoy.

The dining room has a Zen design — red lanterns over dark wooden tables — quiet and comfortable; the same building also holds the Fo Guang Yuan Art Gallery, a library, and the Huizhong Teahouse, worth a stroll after the meal. Dining runs in fixed time slots (two seatings each for lunch and dinner), with a 10% service charge and no outside food. Open daily 11:00am–2:00pm and 5:00–8:30pm.
