中原福州乾麵, in Taipei's Zhongzheng District, serves noodles. It was selected for the “500 Bowls” Taiwanese street-food awards in 2023, earning a two-bowl rating.
The signature is the dry noodles. One diner wrote in a review: “Many find the dine-in ordering chaotic, but just imagine it like dim sum — there are three staff, each handling noodles, soup, and braised sides, coming to the table to take your order…”
